Anise Liqueurs constitute a sub-category of the broader liqueur family. Anise, Pimpinella Anisum, is a liquorice-flavoured plant that has been used for centuries as a flavoring agent and medicine. Used sparingly, it can add herbaceous characteristics to food, but it can be overwhelming.
In liqueur, anise is one of the easiest flavors to identify, the most common descriptors being black jelly beans, liquorice and fennel.
Perhaps the most remarkable feature of anise liqueurs is what is known as the ouzo effect. This refers to the clouding that occurs when water or ice is added, transforming a translucent drink into something resembling a glass of pale milk. (The same phenomenon occurs in absinthe.)
