Ayate Anejo: Aged Like a Fine Wine
Legendary Napa Valley winemaker Dave Phinney of The Prisoner Wine Company and Orin Swift Cellars, has teamed up with Casa Ramirez distillery in Guanajuato (one of the few Mexican states outside of Jalisco where tequila can legally be made), to bring you this fantastic anejo that has been barrel rested in Phinney's own chardonnay wine barrels.
Ayate Anejo is aged for two months in American oak barrels, four months in French oak, and then six additional months in Chardonnay casks, which have traveled to the distillery from Napa. The tequila starts soft and sweet, with notes of butterscotch, caramel, and honey. The wine barrels bring in mid notes of dry oak, and that's when the beauty of the Chardonnay barrels begin to show just how much the agave and chardonnay flavors compliment each other.
