In the 19th Century, aristocrats had a special preference towards Mezcal; it was known among them as "The Cognac of Mexico", because of its unique flavour and exquisite softness.

Mezcal production differs from tequila in that the maguey pinas are roasted or grilled over hot rocks in covered conical pits rather than slow-baked. This roasting caramelises the maguey sugars, giving the mescal its smokiness.

La Penca is the name of the sword-like leaves that are removed from the maguey plant when removing the pina.

Distilled from 'Salmaina' - an outstanding form of Maguey (Agave). The Mezcal is stored in white oak barrels to age, maintaining tradition and ensuring the distinctive flavour profile. 100% Agave. Packaged in a hand blown Artisan bottle. La Penca is complemented by the presence of two Agave grubs rather than the traditional one

    This particular Repossdo Mezcal,, distilled from Salmaina agave and aged in white oak barrels, has a very vegetal and mineral fragrance on the nose, but different from other agave spirits. Upon my first, and later tastings, I found this Mezcal to have a strong black pepper flavor up front with green olive and celery undertones. It’s mild viscosity is noticeable, and I found it to have a woody finish at the end-likely from the white oak barrel aging. Not at all smoky, and different from the Espadin Mezcals I have sampled.-likely an experience from sampling a different variety on agave spirit.. I have enjoyed sipping this, as well as preparing savory mix drinks with this spirit. I recommend this if the profile fits you.
